Where does gluten hide?
Gluten comes from wheat (including spelt and khorasan), rye, barley and oats, and the label must name the grain. It’s in bread, pasta, breadcrumbs, sauces, beer and many spice mixes. A food may only be called gluten-free if it contains no more than 20 mg of gluten per kg. Coeliac disease and wheat allergy are different conditions, but both depend on a correct label.
The 14 allergens that EU law requires on food labels must be emphasised in the ingredients list, usually in bold. When one is missing from the label, or has got into the food by mistake, the producer recalls it and the Danish Veterinary and Food Administration publishes the recall. “May contain traces of” is voluntary and doesn’t guarantee anything either way.
