Where does milk hide?
Milk appears in ingredients lists as milk, cream, butter, cheese, whey, casein or lactose. It turns up in bread, cakes, chocolate, sausages, ready meals and spice mixes, and traces can come from production lines that also handle dairy. Milk allergy is a reaction to milk proteins and isn’t the same as lactose intolerance.
The 14 allergens that EU law requires on food labels must be emphasised in the ingredients list, usually in bold. When one is missing from the label, or has got into the food by mistake, the producer recalls it and the Danish Veterinary and Food Administration publishes the recall. “May contain traces of” is voluntary and doesn’t guarantee anything either way.
